Favorite Sandwich

I have a favorite veggie sandwich recipe, which I've decided to share here.
First, a little backstory.
This recipe originated from a little local health food shop named Karen's, which to my knowledge no longer has a food counter, or is even in business.
My mom took my brother and I to this place to pick up vitamins and at some point she tried this Avocado sandwich, thought it was excellent and had us try it.
The ingredients were simple, if not a bit unusual. Sprouted grain bread, soy cheese (think, cheddar), avocado, tomato, alfalfa sprouts, and for seasoning, a few dashes of cayenne pepper and Spike seasoning. I loved it!
Keep in mind that I was 14 or 15 at the time and "health food" stores were new territory for us.
But this sandwich had us buying our own bottle of Spike and a container to grow your own sprouts so we could recreate this at home.
I have made this sandwich with actual cheddar cheese instead of soy cheese, used lettuce in place of the sprouts when I did not have any, and used whatever sandwich bread I had and it's still great.

Here are the ingredients again:

Avocado Sandwich

Bread (I like multi-grain)
Avocado, sliced
Tomato, sliced
Cheddar cheese (soy cheese, if you can't have dairy)
Alfalfa sprouts (substitute lettuce, or greens of your choice)
Cayenne pepper
Spike seasoning

Instructions:
Toast bread. On one half, place Avocado and tomato.
Sprinkle with Spike and cayenne, then add cheese.
Place under broiler or in toaster oven to melt cheese.
On other half place sprouts/lettuce. Put sandwich together and eat.
